Bakeoff Station Checklist
DEEP CLEAN: SUNDAY: Clean out oven before you turn it on
Turn on oven to 350F
Sheet Donut Dough
Bake Cupcakes
Bake Pull Rack/ Proof Box pastries
Bake Cobblers, Loaves, and Pies as needed
Turn on Fryer
Bake Bagels
Fry Donuts
Print Shopify Orders and update whiteboard with most recent order number
Check that tomorrow's Shopify orders in the 'Store pick-up' App match the orders that are printed
Assemble 'Product Tally' of all orders
Assemble 'Pull Rack' for next day's bake-off
Make Biscuits as needed (FOH needs at least 1 full bin per day, 2 on Saturdays)
Sheet sugar cookies or Pass list to mix station/ baker's assistant for any sheeting that needs t be done
Mix donut doughs for the next day (one Horchata/ One Chocolate per day + extra for Fri/ Sat and specail orders as needed)
CLEANING: Wash all your own smallwares and return them to your workstation
CLEANING: Wipe down all work surfaces at your station
CLEANING: Wipe down the under-table shelf at your station
CLEANING: Wipe down or swap out all cambro lids at your station
CLEANING: Wipe Down your fridge/freezer INSIDE & OUT
CLEANING: Wipe down the Oven door and little silver oven ramp
CLEANING: Sweep your work station floor, including under your table, under your fridge, under the proof box, under the metal box, & both sides of the oven
CLEANING: MONDAY: Deep-mop the station 'unders' and 'peimeters'
CLEANING: TUESDAY: Wipe down the timer machine, wall behind, and area around
CLEANING: WEDNESDAY: deep clean the batter shelf (green metro rack) in the walk-in, assess if more batters need to be requested from the mix-station person
CLEANING: THURSDAY: tidy the cupcake paper area, assess if more papers need to be ordered
CLEANING: FRIDAY: Tidy the cupcake pan/ harvest pan shelf
CLEANING: SATURDAY: Deep Clean the proof box, inside and out
CLEANING: SUNDAY: Deep Clean the sheeter

Cake Station Checklist
(when savory station isn't doing donuts) Turn on Fry Oil, stage glazes and drip pan, fry and assemble donuts when oil is ready
Whip buttercream until smooth & Fill Oreos
Frost Cupcakes for shop and special orders (and cookie tarts if on order)
Assemble all special orders and send over to shop BEFORE the deadline times
Write plaques for the next day's orders
Dip cookies for the next day's orders, if needed
Frost prepped cakes in freezer and any cakes missing from Bake-off cake pulls
Fold boxes as needed for next day (cupcakes, cakes, pastries, sugar cookies, etc)
Assemble any cake tasting boxes on order for the next day
Pull macarons on order for the next day
Make Buttercream if needed
Make Cream Cheese frosting if needed
Make Meringues if needed
Make sugar glaze when needed
Order BRP boxes as needed and keep garage back stock tidy
Send over bins to be refilled when necessary
